Not only does it welcome the first notes of autumn, it also marks our anniversary. This year, we celebrate 41 years of bringing French cuisine, craft, and tradition to our community\u2014and honoring the stories, characters, and culinary mentors who made this place what it is.<\/p>\n<p>When I sat down to create this month\u2019s Chef\u2019s Table, I found myself reaching for one of Chef Brach\u2019s old newsletters\u2014Chez News 37, to be exact. If you\u2019ve been with us a while, you might remember the one about Cousin Hubert\u2019s missing mule:<\/p>\n<p>\u201cMy Cousin Hubert\u2019s mule is missing. It is not lost forever; he will find it again when the prankster farmer who hid it decides the joke has gone on long enough. But Hubert is upset, really upset.\u201d<\/p>\n<p>What followed was a tale of Pyrenees mountain living, tractor mishaps, and marionette-making schoolchildren\u2014all delivered with Chef Brach\u2019s signature wit and razor-sharp language. His humor was dry as good Sancerre and just as complex.<\/p>\n<p>Chef Brach was more than a chef\u2014he was a force. Brilliantly tough, endlessly exacting, and one of the best storytellers I\u2019ve ever known. His newsletters weren\u2019t just restaurant updates; they were part satire, part life lesson, part travelogue. And they\u2019re still worth rereading\u2014especially when crafting a menu in his honor.<\/p>\n<p><strong>This Month\u2019s Menu: A Tribute in Courses<\/strong><\/p>\n<p>This September\u2019s Anniversary Chef\u2019s Table is rooted in dishes Chef Brach respected and the kind of balance he demanded:<\/p>\n<ul>\n<li>Smoked Salmon &amp; Caviar Tartlet \u2013 a nod to his love of refinement<\/li>\n<li>Tournedos Rossini \u2013 with seared foie gras and the grandeur he adored<\/li>\n<li>Dark Chocolate Grand Marnier Souffl\u00e9 \u2013 because some indulgences never go out of style<\/li>\n<\/ul>\n<p><br><\/p><p>And in true Brach fashion, there\u2019s always room for a little practical advice wrapped in charm. From that same newsletter:<\/p>\n<p>\u201cWhile we are on the wine and cheese subject: May I make a suggestion?
