  • Bourguignonne – Slow-braised Wagyu Beef in Burgundy wine with mushrooms, smoked bacon, and herbs, served with roasted garlic potato purée.

  • Rack of Lamb – Roasted New Zealand lamb with a Dijon-Rosemary crust and port-shallot reduction, accompanied by Chef’s seasonal vegetables.
