A Winter Evening at Chez Nous
January invites us to slow down, savor, and settle into the quiet luxury of winter. Our January 2026 Chef’s Table is designed as a carefully paced culinary journey—rooted in classical French technique, seasonal flavors, and thoughtful indulgence. Each course unfolds with intention, balance, and just a touch of decadence.
We begin with Vichyssoise, silken and elegant, served chilled and finished with crème fraîche, fresh chives, and a whisper of caviar. It’s a refined opening—comforting yet unmistakably luxurious.
The second course highlights a beautifully seared Atlantic salmon, paired with a bright fennel–pear relish. A delicate verjus emulsion brings gentle acidity, while candied walnuts add warmth and texture, creating a harmonious balance of freshness and richness.
Next, a timeless French favorite: Escargot en Croûte. Nestled in golden pastry, the escargot is accompanied by smoky bacon jam and a deeply flavored sauce bordelaise—earthy, savory, and deeply satisfying.
A brief intermezzo refreshes the palate, preparing guests for the heart of the evening.
Our main course features mushroom-dusted teres major steak, prized for its tenderness and flavor, finished with a chestnut Madeira demi-glace. Rich, layered, and comforting, this dish captures the soul of winter dining.
We close on a truly indulgent note with a marbled blood orange and chocolate soufflé, light yet decadent, served with a Grand Marnier crème anglaise. Bright citrus, deep chocolate, and airy texture come together for a memorable finale.
