October has always felt like a turning point for me. It is my birthday month, and it is also our wedding anniversary month. My husband and I celebrate another year together both in life and in the kitchen. It is a special time personally and professionally, and it always seems to carry a little extra sparkle.
It is also the month when I finally get to start decorating for the holidays. And for those who know me, you know that Christmas decorating goes gloriously out of control at my house on November 1.
This year’s October Chef’s Table at Chez Nous is inspired by a few of my favorite things, both in flavor and in feeling. Our restaurant, located in Humble, Texas, just minutes from George Bush Intercontinental Airport and the Houston area, has been sharing French fine dining with our community for over 40 years. This menu reflects the seasonal ingredients and elegant flavors that make autumn such a special time in our kitchen.
We begin with petite roasted pumpkins filled with farro, toasted hazelnuts, cranberries, and warm bacon vinaigrette. It is rustic and elegant, the perfect way to start a fall meal.
The second course features seared salmon with blood orange emulsion and fennel, a combination that is both refreshing and rich.
For the third course, crispy pork belly is paired with foie gras and spiced cherry compote, creating an indulgent, deeply flavorful pairing.
The entrée highlights coffee-dusted venison loin with seasonal accompaniments and red wine jus. The coffee brings warmth and depth to the dish without overpowering the meat.
For dessert, we serve a classic chocolate pot de crème finished with almond streusel and Pinot Noir hibiscus syrup. It is a rich and elegant way to end the menu.
This October tasting menu was created to reflect a few of my personal favorite dishes that bring me joy to prepare and share with our guests each season.
